It’s usually served with a side of bean sprouts, herbs, lime wedges, and limes to squeeze into the soup. The broth is typically made from beef bones and oxtail (which add body and flavor), as well as an assortment of spices such as star anise, cloves, cardamom pods, cinnamon sticks, coriander seeds, and fennel seeds.

1 kg (2 lb 4 oz) pork belly, cut into 4 pieces.

500 g (1 lb 2 oz) fresh young coconut meat, scraped from the flesh and roughly chopped.

Prepare a medium-hot fire in your grill. Place the ribs on the grill, cover, and cook for 5 minutes per side, turning with tongs (you’ll need to do this in batches). After each batch is cooked, baste with more of the reserved marinade. Remove from the grill and serve immediately.
